I think that marmalade is one of the most underrated preserves, almost an also-ran, but well-made marmalade can be so much more. Elevated beyond our morning toast it becomes an ingredient in it's own right - dressings, baking, glazes, casseroles, barbeques, drinks, sandwich fillings - then muliply by the many and varied citrus bases for marmalade and you have a whole new range of hope and possibility.
No sharp intake of breath here please - marmalade is easy, if time consuming, to make but worth every second as it keeps so well. If you get organised you can make enough to last two years and then have even more time to experiment with flavours.
